The end of summer brings us so much garden goodness. Zucchinis, peppers, and tomatoes, so many tomatoes! I love cooking tomatoes down into sauce or soup, but sometimes they are just so good that the flavor needs to shine, uncooked, and bruschetta is one of the best ways to do that!

Tomatoes are so versatile. I love making Roasted Tomato and Parmesan Soup when the garden is overflowing with sweet cherry tomatoes. Caprese is one of my favorite snacks and I could eat it all year. Or sometimes, a tomato is just perfect sliced on a burger (especially these stuffed burgers!) But this easy bruschetta recipe is perfect for a quick appetizer or side dish recipe for dinner when you have the cream of the crop and want to showcase that delicious tomato flavor!

I have mentioned here before that I used to work at an Italian restaurant in high school and I learned the best trick for making garlic bread. Before baking in the oven, rub a garlic clove all over the bread to impart flavor. It is subtle but adds that garlicky goodness that everyone loves. For this recipe, I usually do the same, but today I decided to infuse the olive oil with garlic flavor and it is extra delicious! For even more flavor, these tomatoes are marinated for 30 minutes before topping the bread. This marinate times allows all the delicious juices to come out of the tomatoes to soak into the bread!

Since there are only a few ingredients used in this easy bruschetta recipe, I recommend using good ingredients. Go to the bakery and get fresh bread, use EVOO, and most definitely, grate your own parmesan cheese. No green shaker bottle, please! You really only need a few high quality ingredients!

Summer is coming to an end but the delicious food isn’t! We have weeks of fresh produce coming our way to enjoy until September! Before we know it, we will be cooking with apples and pumpkins, but as for me, I will be enjoying this bruschetta recipe for as long as I can!

This recipe for bruschetta is a simple and delicious way to showcase late summer tomatoes!

Ingredients

  • 4 Tomatoes finely diced
  • 1/3 cup Olive Oil
  • 2 Cloves Garlic minced
  • 2 Tablespoons Balsamic Vinegar
  • Salt and Pepper to preference
  • 1/4 cup Basil Leaves cut into strips
  • 1 Baguette
  • Parmesan as desired

Instructions

  1. In a skillet over medium heat, heat 2 Tablespoons of the olive oil. Once hot, add the minced garlic and cook 2 minutes. Remove from heat and allow to cool as you prepared the tomatoes.
  2. Finely dice tomatoes and place in a medium-sized bowl.
  3. Pour the garlic-infused olive oil into the bowl, along with the balsamic vinegar, salt, pepper and basil. Stir to combine and set aside to marinate for 30 minutes.
  4. Preheat oven to 400F.
  5. Slice baguette into 1.5" slices. Brush both sides of each slice with olive oil and place on an ungreased baking sheet.
  6. Bake for 5 minutes, then flip and bake for another 5 minutes until golden.
  7. Top the baguette slices with the tomato mixture and then garnish with Parmesan cheese, as desired.
