Chocolate Peanut Butter No Bake Cheerios™ Bars with Coconut

These Chocolate Peanut Butter No Bake Cheerios Bars with Coconut are a fun take on the traditional marshmallow treat bars! The flavors of chocolate, peanut butter, coconut, and marshmallow combine for a delicious snack or dessert!

It’s January so I should only be posting salads and how to organize your home without spending any money posts, right? Well not today. I found these no bake bars sitting my drafts folder from October and realized I never posted them! Thus, the black and orange chocolate chips! Just ignore the orange and pretend they are all brown, okay? Thanks!

Anyways, I thought of holding off on posting these until we are done with “diet season” but these are so good that I didn’t think they should sit in draft mode any longer! They would be adorable with the red and pink chocolate chips that come out for Valentine’s Day and would make a great classroom party treat. I actually sent these into work with my husband and they loved them. I was hoping for one or two bars to come home for me, but all I got back was an empty pan. Looks like I need to make another batch!

Did you like rice krispie treats as a kid? They weren’t my favorite treat, but I certainly wouldn’t turn one down if offered to me! I find them super sweet though, so I wanted to make an updated version that has more flavor and texture to it. By adding my favorite combination of chocolate and peanut butter to Cheerios and melted marshmallows, I think I achieved the perfect grown up version! At the last minute, I threw in some coconut, and am so glad I did! I absolutely love coconut, but if you aren’t a fan, you could just leave it out.

Chocolate Peanut Butter No Bake Cheerios™ Bars

Ingredients

  • 4 cups multi-grain Cheerios ™
  • 8 oz. marshmallows
  • 1/2 cup creamy peanut butter
  • 1 1/2 tbsp. unsweetened cocoa powder
  • 2 tbsp. butter
  • 1/3 cup coconut flakes + 1 tbsp. for sprinkling
  • 1/3 cup chocolate chips

Instructions

  1. In a microwave safe bowl, combine marshmallows and butter. Microwave on high for 60 seconds and then remove from microwave and stir well. Add peanut butter and cocoa powder and then microwave again on high for 30 seconds. Remove and stir well.
  2. Immediately add the cheerios and coconut and stir until all is well incorporated.
  3. Spoon into an 8 by 11 non-stick pan, or a greased glass pan of the same size, and then use your fingers or a wooden spoon to evenly distribute throughout the pan. Immediately sprinkle with the remaining coconut and the chocolate chips. Press coconut and chips into the Cheerios™ mixture so that they are stuck.
  4. Let sit for at least one hour so that it can set back up and then cut into squares and serve.
  5. Note: Once you melt the marshmallows and butter, work quickly so that they don´t start setting back up before you add in the other ingredients.
