Mexican Burgers with Homemade Brioche Buns

Mexican Burgers topped with avocado slices, fresh salsa, all put on a delicious homemade brioche bun!

There are some dinners that I know are going to be really good. You know, the ones that you plan out every detail or you scour the Internet for the perfect recipe? And then there are some dinners that you throw together in five minutes and hope for the best. This was one of those dinners. I had no plan, but knew I wanted to use my homemade hamburger buns that I had made the day before. I gave Ryan his choice between Asian Burgers or Mexican Burgers (neither of which I had any plan for, just thought they sounded like good choices) and he picked the Mexican. I have seen this idea floating around Pinterest, but I basically just winged it.

Well he certainly made a good choice because these burgers were delicious. I usually just make plain ol’ burgers and this was such a good change. These are definitely my new favorite way to prepare hamburgers.

Mexican Burgers with Homemade Brioche Hamburger Buns

Now on to the buns. I was fed up last week after buying whole wheat hamburger buns from the store. They are just so mehhh. I made a really good sandwich and the store bought bun seriously ruined it. Since I had recently conquered my fear of yeast, I decided homemade buns were in order. I have also started a 30 before 30 recipe challenge, and homemade hamburger buns sounded like the perfect way to start it out.

I went to my go to recipe source Annies Eats and knew that her bun recipe wouldn’t let me down. I am linking to her recipe here instead of rewriting it because I followed it pretty closely, although I used almost a cup more flour than she did. Here is her recipe. These buns turned out absolutely delicious but I had a lot of trouble working with this dough. It was very sticky and I would not recommend it for the beginner baker. I am going to keep searching for my own perfect hamburger bun recipe and as soon as I do, I will be sharing it here with you all. Until then, go ahead and give Annie’s a try because they were definitely worth the effort!

Mexican Burgers with Homemade Hamburger Buns

Mexican Burgers with Homemade Brioche Buns

Ingredients

  • 1 lb. lean ground beef
  • 1 tsp. cumin
  • 2 tsp. taco seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 burger buns I recommend homemade!
  • 1 avocado sliced
  • 1/2 cup fresh salsa or pico de gallo
  • 4 slices colby jack cheese

Instructions

  1. Prepare meat by mixing in cumin, taco seasoning, salt, and pepper.
  2. Mix well with hands and then divide into 6 burgers. Press burgers into patties, indenting the middle because it will raise as it cooks. Just use your thumb and press down in the center of the patty.
  3. Grill your burgers on each side for about 4 minutes, or until cooked to your desired temperature. Toast buns on the grill for the last minute of cooking time and also add the cheese to melt on your burger for the last minute as well.
  4. Lay your cooked burgers on the buns and top each burger with avocado slices and salsa. Eat immediately and enjoy!!
