Skinny Chocolate Chip Brownies


Oh my guys…these are good, really good…and they have some crazy ingredients. They are moist, chocolatey, and anything and everything you could want from a brownie! They are also gluten and flour free if those are things you are trying to avoid!

I was skeptical when I first read this recipe, I was even more reluctant whenever I was mixing these up. But after tasting them, I am a big fan. I first tried these out on the husband, not mentioning that they were healthy or had any weird ingredients, and he loved them. Later that night, I served them to my parents, who had absolutely no idea that they were any different than regular brownies. Even the two year old enjoyed them mixed into her bowl of ice cream! Give these a try if you are looking for a healthier dessert, or are just in the mood to try something different!

Skinny Chocolate Chip Brownies

Ingredients:
1 (14 oz) canned low-sodium black beans, rinsed and drained
2 large eggs
1/2 cup cocoa powder
3/4 cup sugar
1/2 teaspoon oil
1 tablespoon unsweetened almond milk or skim milk 
1 teaspoon balsamic vinegar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon of fresh coffee grounds or instant coffee
1 cup semisweet chocolate chips, divided

Preheat your oven to 350 degrees. Spray an 8 x 8 baking pan with cooking spray, or line with parchment paper. In the bowl of a food processor, combine all ingredients but the chocolate chips. Blend the ingredients until completely smooth. Pour batter into a separate bowl, and gently fold in half of the chocolate chips. Pour batter into baking dish and top with the remaining chocolate chips. Bake for 30-32 minutes or until a tooth pick comes out clean. Cool completely before cutting into squares.
