This Roasted Red Pepper and Parmesan Tortellini Salad is the perfect summertime salad for entertaining and BBQs.
So last night my husband wanders out of the kitchen and says “you know what this house is really missing since you became pregnant? Food.” I had to laugh because he is so right. For someone who loves cooking as much as I do, I can barely muster a presentable dinner these days.
A few days ago, I decided to be ambitious and whip up some pork chops and macaroni and cheese and my husband and my Mom walked in mid-cook and they both looked around bewildered. I had every utensil and ingredient out on the counters and it was a mess. They asked if I had forgotten how to cook and that’s just how I felt. Completely foreign in my own kitchen!
I have had to send my husband grocery shopping a few times due to lack of motivation/sickness/general pregnancy discomfort and recently he came home with these cute Share a Coke and A Song Coca-Cola™ in a mini can from Giant Eagle. They have fun song lyrics on them and this pack has “What I Like About You” and “Put a Little Love in Your Heart.” I think what he was really trying to say was “What I Like About You is Your Cooking, so Could You Cook Me Something Please.” Well I decided to put a little love in his heart by cooking some of his favorite things, including this Roasted Red Pepper and Parmesan Tortellini Salad. I loved that it made a big batch and we could eat it for lunches this week. No complaining that there isn’t any food in the fridge this week!
There are so many fun entertaining events coming up this summer. Graduations, Father’s Day, Picnics, the 4th, and everyone always loves pasta salad. I mixed up my regular pasta salad routine by switching out the noodles with tortellini and making a tangy red pepper and Parmesan dressing. It is definitely different than the normal picnic salad, and the strong flavors hold up to grilled burgers and hot dogs.
Put A Little Love in the Hearts of the other party-goers with this salad! They will definitely be asking for the recipe. This recipe is great because it is make ahead and can be served cold. I hate rushing around before a party putting together my recipe, so I love whenever I can make something the day before hand and just pull out of the fridge. Just like most pasta salads, this salad gets better as it chills, so you can make it up 2 days in advance.
I am so glad these mini Coca-Colas ended up on my kitchen counter because they very subtly reminded me that one of the hobbies I love most is cooking. Cooking evokes so many good memories and moments, and my lack luster dinners have become so routine that I have lost those moments recently. Music goes together perfectly with summer entertaining and making memories and I look forward to seeing what other song lyrics I can find on different Coca-Colas!
- For the salad:
- 1 lb. refridgerated tortellini, any flavor you like
- 8 oz. mozzarella, cubed
- 4 oz. mini pepperoni
- 4 oz. sliced black olives
- 1/2 pint cherry tomatoes, sliced in half
- 2 jarred roasted red peppers packed in oil, diced, reserve the oil
- salt and pepper to taste
- fresh basil for garnish
- For the dressing:
- 3 tbsp. of the roasted red pepper oil
- 1 tbsp. extra virgin olive oil
- 2 tbsp. balsamic vinegar
- 1 tbsp. red wine vinegar
- 3 tbsp. parmesan cheese
- Boil pasta according to directions. Set aside and allow to cool.
- In a medium sized bowl, add pepperoni, black olives, cheese, tomatoes and red peppers. Add cooled pasta and stir well to distribute.
- In a separate bowl, add all dressing ingredients. Whisk together and then taste. Add more vinegar or oil as desired. We like ours tangy, so I usually add a few more dashes of red wine vinegar.
- Add dressing to the salad and then stir. Taste and then add salt and pepper to taste.
- Refrigerate for at least one hour, but it is better the longer you allow it to chill.
- Garnish with basil and then serve cold and enjoy!
