Earlier this week I shared my Battered and Baked Zucchini Fries and mentioned that we had a delicious, creamy dip that we served with it. Not only is this dip great with the fries, but it is a hit with chips or carrot sticks.
I love this dip because it has minimal ingredients and besides cooking the onions, there is barely any work involved. The best thing about this dip though is that I can eat it and not feel guilty. By replacing the full fat mayo and sour cream that is normally in a dip, you get a much healthier dip that is just as delicious as the full fat versions. When I served this with the fries, neither my Dad nor Ryan had any idea that there was yogurt in this dip!
Skinny Sweet Onion Dip
2 onions, sliced thin then diced
1 tbsp. butter
1/2 cup plain non-fat Greek Yogurt
1/2 cup low-fat mayonnaise
1 tsp. ketchup
1 tsp. Worcestershire sauce
In a pan over low heat, melt your butter then add the onions. Sprinkle a generous sprinkling of salt over the onions to help release the water in the onions, which allows them to caramelized. Add the Worcestershire sauce to the pan. Cook slowly, stirring frequently, for about 20 minutes, or until golden brown and caramelized.
In a separate bowl, mix together the yogurt, mayo, and ketchup. Once onions are cooked and cooled, add to the mixture. Stir well and then cover and refrigerate until serving. Best if chilled for a few hours before eating.
